I love cooking it, eating it, reading about it. By day I work in IT but by night I am a passionate cook.

Concept cooking is how I like to categorise my style. I’m not great at following recipes exactly which is why I’m not the baking-geek! Is that a foodie joke? But I use recipes to get a concept – both of the outcome and the process.

I often start with the question – what part of the world are we in. It’ll shape the kind of oil, vinegar, herbs and spices you use. Often the vegetables are intercchangeable but these flavour basics are what defines the great cuisines – Italian, French, Chinese, Thai, Indian etc.

So my recipes are really starting points for you. Use them and modify them for what is in your cupboard, what is fresh, what fits your budget. I include obvious substitutions. Let me know your variations.
